Watermelon, Mint, and Walnut Salad

Watermelon, mint, and walnut salad can be your ideal summer breakfast or late night dinner option. Watermelon is one of the most popular and refreshing summer fruits. One of my favorite go-to summer recipes is this watermelon, mint and walnut salad. There are several different versions of watermelon mint salad, but in this article, I present you the easiest and simplest way to enjoy this refreshing healthy salad.  It’s fresh, fruity and impeccable for enjoying on those warm nights. Plus, it takes almost no time at all to make! So, ready to get your watermelon salad on?!

Serves: 2-3

You will need:

  • 3 cups watermelon
  • 1/2 cup chopped walnuts
  • 2 tablespoons raw honey
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon chopped mint

Instructions:

  1. Remove the rind from the watermelon and cut it into some large pieces. Since this fruit is the real star of this salad recipe, opt for the best watermelon you can find.
  2. Next, add the pieces to a large bowl.
  3. Then, mix the raw honey, freshly chopped mint, and balsamic vinegar in a small bowl. Mix well. Next, add the chopped walnuts and combine again. Whisk until the ingredients are smooth.
  4. Pour the mixture over the watermelon pieces. Place the bowl in the fridge for about 30 minutes.

Extra Tips:

If you don’t like walnuts – you can sprinkle some feta cheese over your salad, instead. For example, my husband likes feta cheese. So, during the summer – one of his fav breakfasts is freshly sliced a watermelon with some crumbly slices of feta. This cheese is a great complement to the cool pleasantness of the watermelon.
