This Mother’s day cake is so delicious and creamy and very easy to make. You can surprise your mother or wife with this amazingly simple and tasty recipe and celebrate the amore per tua mamma. Here is the recipe:
- ½ cup butter, at room temperature
- 2 cups sugar
- 5 egg yolks, beaten
- 1 cup oil
- 2 cups all-purpose flour
- 1 cup buttermilk (or mix of 2 tablespoon vinegar in 1 cup of whole milk)
- 1 teaspoon vanilla extract
- 1 can hazelnuts, chopped
For the filling:
- ¼ cup butter, at room temperature
- 8 ounce (1 package) cream cheese, softened
- 1 lb confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 cup shredded coconut.
Frosting:
- 1 cup heavy cream, whipped
Instructions:
- Preheat the oven to 360F/180C/Gas Mark 4.
- Using an electric mixer, cream butter, oil, and sugar until light and fluffy. Apply egg yolks and whisk well.
- Add in soda and flour; mix well. Pour buttermilk and vanilla; combine well. Add the egg whites and beat all over again. Set aside.
- In a blender, process chopped hazelnuts into a powder. Apply in the batter and combine.
- Grease and flour three 8″ round cake pans. Divide the batter into each pan. Place in the oven and bake for about 15-20 minutes. Remove to wire rack to cool.
- Next, beat butter, sugar, and cream cheese until creamy and well incorporated. Add in vanilla and coconut. Combine shortly again.
- Spread between layers. Frost the top and sides of cake with whipped cream. Decorate to surprise your mother (if desired).
