Watermelon, mint, and walnut salad can be your ideal summer breakfast or late night dinner option. Watermelon is one of the most popular and refreshing summer fruits. Hibernating during the winter time, the juicy taste of watermelon makes its triumphant comeback at outdoor potlucks and barbecues all summer long. You can include watermelon in your juices, smoothies, cocktails, and even salad recipes.
One of my favorite go-to summer recipes is this watermelon, mint and walnut salad. There are several different versions of watermelon mint salad, but in this article, I present you the easiest and simplest way to enjoy this refreshing healthy salad. It’s fresh, fruity and impeccable for enjoying on those warm nights. Plus, it takes almost no time at all to make! So, ready to get your watermelon salad on?!
Total Time: 10 minutes
You will need:
- 3 cups watermelon
- 1/2 cup chopped walnuts
- 2 tablespoons raw honey
- 2 tablespoons balsamic vinegar
- 1 teaspoon chopped mint
- Remove the rind from the watermelon and cut it into some large pieces. Since this fruit is the real star of this salad recipe, opt for the best watermelon you can find.
- Next, add the pieces to a large bowl.
- Then, mix the raw honey, freshly chopped mint, and balsamic vinegar in a small bowl. Mix well. Next, add the chopped walnuts and combine again. Whisk until the ingredients are smooth.
- Pour the mixture over the watermelon pieces. Place the bowl in the fridge for about 30 minutes.
This time will be quite enough for the marinating to impart the watermelon with a minty, sweet taste that you will get from these natural ingredients.
That’s all, folks! Enjoy your healthy salad!

Even though it’s a “salad” – trust me, it can easily pass as a dessert! But, don’t worry – all these ingredients are low in calories, therefore, you can enjoy it as much as you want!
If you don’t like walnuts – you can sprinkle some feta cheese over your salad, instead. For example, my husband likes feta cheese. So, during the summer – one of his fav breakfasts is freshly sliced a watermelon with some crumbly slices of feta. This cheese is a great complement to the cool pleasantness of the watermelon. Moreover, feta cheese has some impressive healthy benefits, find more about that: LINK
Nothing says summer as fresh watermelon, mint, and feta cheese salad!
A colorful and refreshing recipe of mouth-watering watermelon, mint, and walnut salad can be an ideal treat in every well-balanced diet. All the above-stated ingredients are rich in great nutrients and low in calories. Walnuts are richer than most other nuts in polyunsaturated fats. They contain a relatively high percentage of an important omega-3 fat known as alpha-linolenic acid (ALA). Balsamic vinegar is a great antioxidant and can help prevent and fight many diseases, as heart attacks, diabetes, and cancer; also supports weight loss. Plus, mint is an amazing palate cleanser or appetizer, it promotes digestion, and soothes stomachs in cases of inflammation or indigestion. Watermelon may be mostly water but this refreshing fruit is soaked with numerous nutrients. More about health benefits of watermelon: https://yourhealthtube.com/watermelon-greatest-health-benefits/
